Toatal oats and pulses flour mixture was researched and developed by Louise Birch, a Chinese Canadian woman passionate about the intersection of food and health. Louise’s interest in food and health was sparked not only by the Chinese culture, where food has long been considered a form of medicine, but also by her parents who both worked as professionals in the medical field. This interest later transcended into her becoming a rising medical journalist in China in the 1980’s. Upon immigrating to Canada, Louise’s interest became a passion she would work at daily: she opened a cafeteria in a medical centre where she ensured highly nutritious foods were made available.

Later in her consulting career, Louise had the opportunity to interact with many scientists in both the food and health sectors. In 2016, while working with Agriculture and Agri-foods Canada on files related to oats and pulses, she discovered an opportunity to use oats and pulses to develop unique products for healthy-minded consumers.

The Toatal oats and pulses flour mixture is the first product she has developed that can be used by grocers and consumers alike to bake their own healthy breads, pastries and pastas.
